Kefir grains naturally reproduce themselves when they are active.We have what we call mild kefir and strong kefir. Many people ask the difference between the two. Our strong kefir is from the grains that we started approximately 20 years ago. As time went on, the kefir got stronger for some reason. When using raw milk, the kefir grains have to compete with the good bacteria in the raw milk and when compete it can create its own strain. Some members love our tart tasting kefir. Others dislike the strong flavor and prefer the more mild version. It’s really just a matter of preference.

Composition of Milk Kefir Grains: Bacteria & Yeasts

Milk kefir grains are a combination of live bacteria and yeasts that exist in a symbiotic matrix on a surface of a complex polysaccharide with a casein core. The make-up of kefir grains can vary depending on the culturing location and culturing conditions.

This means the community of lactic acid bacteria and yeasts can be highly variable in batches of kefir cultured in different places by different people.
