Green garlic appears briefly in the winter when it’s harvested before the bulbs are fully grown. The green and white stems are mild flavored and similar to a leeks, but garlic forward in taste. Toward the root end, you’ll sometimes find small, tender bulbs that can be used like traditional garlic. Some yellowing is expected on the leafy part of the garlic stem as this part of the plant is above ground and is exposed. It can be simply trimmed away before preparation. The garlic flavor is located most intensely in the white-bulb area near the roots.
